Fabian is a fourth generation producer. “My father Álvaro Acevedo was the one who got me involved in coffee, motivating me to learn more about quality.” Alvaro started learning more about fermentation and processing, and achieved positive results and higher coffee quality.
The family began this journey in 2006, when they produced clean washed coffee with lots of room to improve. In 2013 they started modifying their fermentation practices with good results. Finally, after many years of tenacious work, they saw a big boost in quality in 2018.
Washed, dried on raised beds. The coffee is oxidized for 24 hours after picking and, after depulping, is then fermented for 36 hours. The coffee is dried for about 15 days on raised beds with good ventilation.
