Osmin is a third generation coffee producer, and he recently added a wet mill in order to oversee more of the coffee process. In the future, he also hopes to experiment with honey and natural processing.
Washed and sundried. Pickers focus on selecting only ripe cherries, and the greens are removed before processing. After depulping, the coffee is fermented for about 36 hours, and then washed thoroughly. The parchment is dried on the patio for about 4-5 days, and is turned often. It is then stored in a clean and dry place until it is delivered to us.
